Depends on how much you feed the hawk, all food can put weight on a hawk if given enough.
youve been speaking about a few birds u have if im correct? sureley this should be common sense? not having a go, just sounds a bit wierd

That's right. Rabbit has very little fat. If you're trying to reduce the weight of your bird, keep some rabbit meat in a bowl of water overnight in your fridge, and even less weight will amass on the bird. However, she'll feel like she's eaten alot. If you want more weight, quail or rat is good..more nutrients too.....

Also depends on which bits of the rabbit you feed. The head is higher due to the brain, the heart and lungs etc are also good feed value.

Good advice.
But the quality of meat also depends on the condition of the animal.
Autumn rabbits around here are rolling in fat and it is difficult to keep a goshawk at flying weight when feeding them. On the other hand, the meat of young summer rabbits is very poor feeding value, slightly better than washed meat. You will notice that these have very little internal fat. (That's usually around the kidneys and below the back muscles inside the abdominal cavity).
You can judge the quality of meat by looking at it (how much fat is there?) and by feeling it. If it leaves a greasy feeling between your fingers, it is probably quite rich.
Nothing is straight forward. But that's where the "art" comes into falconry. Hope that helps!
