Not so sure about hoods, but anklets and jessies are a doddle to make, all you need is some good leather, good pair of scissors, hole punches (I find the ones you hit with a hammer are best) and a eyelet tool. Just make sure you make em the correct size.

Glasiers book gives relatively simple instructions on making a basic anglo indian hood and how to make a glove.

Hi,

There is a book called "Falconry Equipment" by Bryan Kimsey and Jim Hodge. It show how to make most falconry equipment including jesses, hoods, falconry bags/vests and gloves along with numerous other pieces of equipment.

I don't know where it is available in the UK but I got my book from Mikesfalconry.com (http://www.mikesfalconry.com/product.asp?specific=jnpofpq0)
