do they remmeber about the importance of a headshot, do they remmeber that rabbits are worth pursueing? or is it almost starting over again?

They don't forget, they will remember the good and bad. So any thing that went wrong in year 1 will come back to haunt you 2nd year. It is good to finish the season on a good note and feed up on the last kill. If you don't keep a contact with your bird during the moult you will have to go through a manning process, but it will be shorter. You will also have to go through that horrid creance stage untill you get the weight correct, but that is a lot quicker too. Don't expect the bird to fly at the same weight every year, they do change as they mature and you will have put on new equipment. But if you had a good season your bird will be ready to take quarry the moment you take off that horrrid 'bit of string'...or even before
