Check the Archives of North American Falconry. There's a link on the www.N-A-F-A.org web site. It's a great source for these sorts of questions.

Here is a good reference for a period of time before the 11th century.

Epstein, Hans J., (1943). The origin and ealiest history of falconry. ISIS, Vol. XXXIV, Pt. 6, No. 98, pp. 497-509.

I also like the translation of the "Falconry in Russia: an historical outline" by George Dementiev which was published in the 1977 NAFA journal.

Let me know what you find in your search, ok.

I found this page on the web after reading your post and I found it quite interesting, worth a look at least, and it does mention the 11th century however briefly
Hope it is of use to you or anyone.

The patron saint of the falconers is Sint bavo. Legend has it that alwin was found in possession of a pure white Gyrfalcon, which could only be owned by the king. He was accused of stealing it and was found guilty and sentenced to death at the stake. When the pile of wood beneath him was set alight, the Gyrfalcon managed to get free and flew to perch on the stake above alwin his head. The town's people believed this to be a sign from God and freed alwin. After a while Alwin became Sint Bavo. There is a small chapel in Mendonk (Gent)

This is way before the 11th century it was about year 600.

I like the story though :D
