Can I join an apprenticeship if I am not 18? Cleaning up and taking care of birds would get good marks on my score sheet right? Or do you have to be 18 and have the legal stuff to join an apprenticeship?

Feds set the min age at 14, but some states are higher. I became an apprentice in MA when I was 15. Do a little more reserch into the sport and regulations and I will answer your other questions.
